I want to start a recipe of the week feature but I just don’t think I’ll have the time to always come up with something. But if you’re curious this is what I’m making this week.

Greek Quinoa and Kale Salad

I had the idea to make a massaged kale salad and add feta, red onions, olives, and tomatoes but then that some how morphed into a quinoa salad because it was on sale and I haven’t bought any since earlier

So here goes:

Week 1: Greek Quinoa and Kale Salad

Ingredients

  • 1 cup quinoa prepared according to package
  • 4 servings kalamata olives
  • 1 cup feta
  • 1 cup cherry tomatoes
  • 1/2 cup chopped red onion (or however much you like)
  • juice of 1 lemon
  • 1.5 TBS extra virgin olive oil (EVOO)
  • 2 cups chopped kale
  • 1/2 TBS extra virgin olive oil (EVOO)

Directions:

1) Add cooked quinoa to a large mixing bowl along with onion, feta, tomatoes, and olives.

2) In a separate bowl dump in your kale and and 1/2 TBS EVOO. Squeeze some of the lemon over and massage with hands.

3) Add kale to bowl with quinoa and mix in the remaining EVOO and and squeeze the rest of the lemon. Gently toss and allow to sit in the fridge for at least an hour so the kale begins to wilt.

I definitely ate a bowl before I gave it time to mesh. Still yummy!
