Quick Easy Meal

Happy December, my second favorite month of the year! Due to impending exams I’ve been focusing on quick meals and repurposing our thanksgiving leftovers. My favorite creation and the only one worth posting is my awesome Thanksgiving Soup.

The flavors from the smoked turkey (we smoke and fry our turkeys) and the cinnamon, vanilla, and nutmeg from the sweet potatoes really give this soup its flavor.


Thanksgiving Soup

2 cups smoked turkey (leftover from Thanksgiving)

2 cups chicken broth (leftover)

2 cups vegetable broth (leftover)

1.5 cups chopped kale

Leftover sweet potatoes

2 cloves garlic

1 1/2 cups chopped carrots

1 cup celery

2 bay leaves

1/2 cup chopped onion

1tsp olive oil


Such a super easy meal. The only thing I did was sauté the onion, garlic, carrots, and celery in olive oil and then I added it to my soup pot with the remaining ingredients. I brought it to a boil to let the veggies get softer and then just let it simmer for 30 minutes.

Now it’s time for me to study, study, study. I have TONS of chem work to get done.
