The Beginnings of Fall

To celebrate the beginnings of Fall we went apple picking this weekend.  Such a good time with my absolute favorite guy and one of my very dear friends.  It’s one of our traditions that I hope to keep going for years to come!

Now to come up with some recipes for all of those apples.

What We’ve Been Up To

Long time no post.

My body is so out of wack right now and I can’t seem to get back to myself. Having no power for a week and then having it come back on and then go off again a few days later really showed me how heavily my body relies on it.

Since the power outages I’m not sleeping that well. In fact I stayed awake 2 straight days watching all 4 seasons of Mad Men via Netflix until my son woke up. I think all that going to bed as soon as it got dark messed me up. Also not eating enough vegetables since our food went bad, and lastly not being able to run. I rely on running outside but with the power lines and trees down and in the road that didn’t happen…speaking of that there are STILL lines down and trees in the roads and on the sidewalks.

I’m going to try to come up with a vegetable based recipe over the weekend to post here.

Monday Rundown

I would wish you a Happy Columbus day but I don’t think it should be a holiday. In fact most places around here do not observe it except the bank, elementary school, and obviously retail places use any excuse to get you in their stores.

For me today was a normal Monday. I had class, we had our normal Monday quiz, and after I stopped at Starbucks for an iced coffee with a pump of pumpkin spice and pump of caramel. It was actually yummy. Normally, I don’t like pumpkin in cold drinks but my BFF convinced me to try.

After that I had an interview for a 2nd job which I think went well. I pretty much have interviews down since this is the 4th one I’ve had in the past 5 days.  I hope I hear back from some of these jobs soon.

The weekend involved an impromptu road trip to pick my sis up from college.

She wanted to come home for the “holiday” and I wasn’t the one who was supposed to go but I went last minute. We had some sisterly bonding time, I took a bunch of cool pics of her campus but for privacy reasons won’t post, lastly we took Little Man to the pumpkin patch. I’ll do a post when she emails me the pics from her fancy smancy camera. Until then here is a teaser:

Lastly, I ran today! I actually did the interval workout I posted about last month. It’s 34 minutes out and back but I added extra walking to make it 3 miles.

There you have it just a quick little rundown of things going on.

It’s The Time of the Season

Happy Labor Day Everyone!

Hope you take the day to relax, be with friends and family, and just live up the time you have off.

Although it may not be fall technically, I’m gonna go ahead and call it.

I saw this tree on my run yesterday already turning colors. In honor of that I’m busting out the pumpkin for breakfast.

It’s been a few weeks since I’ve had oatmeal and I found these cans of pumpkin hiding in the back of the pantry.

Sidenote: Last year I stocked up on a million cans of pumpkin. Okay, probably 15ish. I made these really awesome pumpkin muffins and everyone loved them.  I bought a million cans because I was making pumpkin muffins & cookies as gifts but then Little Man and I got the stomach flu so baking stopped and lots of pumpkin went unused.

Pumpkin Oats

1/2 cup oats

1 cup water

1/4 cup pumpkin

1 tsp brown sugar

1 small banana (1/2 mixed during cooking. 1/2 sliced on top)

pecans

pumpkin pie spice sprinkled on top

Time for me to head to an appointment with the eye doctor. It’s been 3 years! I need a new prescription bad.
